In cooler years, we produce this ‘blanc de blancs’ sparkling wine from Chardonnay grapes. The base wine, after a suitable period of maturation in the cellar, is refermented in pressurized tanks, thus becoming effervescent.
It displays a persistent perlage of tiny bubbles, which caress the palate, leaving a tangy, creamy sensation in the mouth.
